Pulses
Pulses are one of the important food crops globally due to their higher protein content. Pulses are an important group of crops in India, which is also responsible for yielding large financial gains by amounting to a large part of the exports. Pulses are the major sources of protein in the diet. Of all categories of people, pulses form an integral part of the Indian diet, providing much-needed protein to the carbohydrate-rich diet. India is the largest producer of pulses in the world.
Bengal Gram
Bengal gram is widely appreciated as health food. It is a protein-rich supplement to cereal-based diets, especially to the poor in developing countries, where people are vegetarians or cannot afford animal protein. The pulse proteins are rich in lysine and have low sulfur containing amino acids.
Black Gram
The pulse ‘Black gram’ plays an important role in Indian diet, as it contains vegetable protein and supplement to cereal based diet. It contains about 26% protein, which is almost three times that of cereals and other minerals and vitamins. Besides, it is also used as nutritive fodder, specially for milch animals.

Greengram is an excellent source of high quality protein (25%) having high digestibility. It is consumed as whole grains as well as “Dal” in a variety of ways in our food. Sprouted green gram is used in the preparation of curry or a savory dish (South India).

Chickpea is a good source of important vitamins such as riboflavin, niacin, thiamin, folate and the vitamin A precursor β-carotene. As with other pulses, chickpea seeds also contain anti-nutritional factors which can be reduced or eliminated by different cooking techniques.
brown Chickpeas
As a rich source of vitamins, minerals, and fiber, chickpeas may offer a variety of health benefits, such as aiding weight management, improving digestion, and reducing your risk of disease. Additionally, this legume is high in protein and makes an excellent replacement for meat in many vegetarian and vegan dishes.
White Urad Dal
Urad dal possesses excellent antioxidant properties that make it beneficial for the heart, liver and kidneys. In addition, it has a low glycemic index and high dietary fibre content that may be helpful as a good food substance for patients with diabetes and those on weight control diets.
